Khachapuri.

Our friend Tako natural Georgian girl, that’s why she has a big talent in cooking. Even if she cooks something for first time, it always comes out perfect J.
This time Tako baked Khachapuri and we got real masterpieces.
Here is her recipe:

She used for 4 people:

For Dough:
Flour – almost 1 kg.
Milk – 1 glass.
Yeast – 2 tab.
Olive oil – 1 tab.
Salt.
Sugar.
Warm water.

Filling:
Feta cheese – 250 gr.
Mozzarella – 250 gr.
Cottage cheese – 250 gr.
Milk – 50 ml.

Tako's method:

To make the dough, sift the flour into a large mixing bowl. Warm up a glass of milk, put 2 teaspoon of yeast, 1 teaspoon of olive oil, salt, and sugar, mix everything. Make the well in the center of the flout and add the milk mix. Add enough warm water to make a dough. Let stand for 1 hour in warm environment.

Divide the dough into four equal parts.

Flat the parts into oval-shape. To make the filling, mix 3 cheeses (grate them) and about 50 ml of milk. Put some cheese in the middle of it, leaving free edges (about 3 cm.), the edges should be closed about ¼ part of dough from every side.

Roll the edges to the center, till the cheese starts. The middle of Khachapuri should be open, but not too loose and too open, because the cheese might melt and come out.

Heat the oven up to 350C and place Khachapuri there for about 30-45 minutes. Check the color, when they are almost ready put one egg into every piece and add small piece of butter. Leave it in the oven for 2-3 min, the egg should be "sunny side" cooked.

The method of eating:

Mix melted cheese and egg. Tear off peaces of dough and and dip them in the mix.

Bon Appetite!!!

How to cook Quinoa

First of all we need to keep proportion 1:1,5 (1 cup of Quinoa: 1,5 cup of water). In general you could cook Quinoa in any way: sweet, spicy, plain, with nuts, raisin etc.. I'll share with you the simple recipe which I use most of the time.

 Ingredients:
Quinoa - 1 cup
Water - 1,5 cup
Frozen green pees - 1/3 cup
Salt - 1/2 tea spoon
Chicken soup - 1 teaspoon

Direction:

 1. First you need to wash and soak Quinoa in water for 5-10 min.
**The soaking is needed to break down the outer shell of the grains and prevent slightly bitter taste of it which may occur if soaking is skipped.
 2. Bring water with green pees to boil and add Quinoa, salt and chicken soup in it.

 3. Wait till water start to boil and keep it like this for 2-3 minutes, after this reduce fire to minimum. Cover the pot and let it stay like this (over a small fire) for 20 minutes.
 4. Switch off the fire and let it sit for 5 extra minutes covered.
P.S. When Quinoa is ready you will see that it double its size and each grain have a little white tail:) That's the sign.. Ready!

Enjoy.

Quinoa is a great addition to many dishes. Very healthy grain, which benefits I'll share in next post;)
