Khachapuri.


    Our friend Tako natural Georgian girl, that’s why she has a big talent in cooking. Even if she cooks something for first time, it always comes out perfect J.
This time Tako baked Khachapuri and we got real masterpieces.
Here is her recipe:




She used for 4 people:

For Dough:
Flour – almost 1 kg.
Milk – 1 glass.
Yeast – 2 tab.
Olive oil – 1 tab.
Salt.
Sugar.
Warm water.

Filling:
Feta cheese – 250 gr.
Mozzarella – 250 gr.
Cottage cheese – 250 gr.
Milk – 50 ml.

Tako's method:

To make the dough, sift the flour into a large mixing bowl. Warm up a glass of milk, put 2 teaspoon of yeast, 1 teaspoon of olive oil, salt, and sugar, mix everything. Make the well in the center of the flout and add the milk mix. Add enough warm water to make a dough. Let stand for 1 hour in warm environment.







Divide the dough into four equal parts. 






Flat the parts into oval-shape. To make the filling, mix 3 cheeses (grate them) and about 50 ml of milk. Put some cheese in the middle of it, leaving free edges (about 3 cm.), the edges should be closed about ¼ part of dough from every side. 




Roll the edges to the center, till the cheese starts. The middle of Khachapuri should be open, but not too loose and too open, because the cheese might melt and come out.




Heat the oven up to 350C and place Khachapuri there for about 30-45 minutes. Check the color, when they are almost ready put one egg into every piece and add small piece of butter. Leave it in the oven for 2-3 min, the egg should be "sunny side" cooked. 














The method of eating:

Mix melted cheese and egg. Tear off peaces of dough and and dip them in the mix.
